These extinguishers are specifically designed for use on fires involving cooking oils & fats.
They work by the chemical in the extinguisher reacting with the oil to form a thick soapy substance which puts a non combustible seal between the oil and the oxygen it needs to burn and so extinguishes the fire and prevents re-ignition.
Anyone using this type of extinguisher should stand well back from the burning fat and gently apply the liquid to the surface of the fat using the special long lance attached to the extinguisher.
